Recipe: Peanut Butter Cookies

Perfect. Melt in your mouth. Gooey.

There are sooo many cheesy adjectives I wanted to add in front of ‘peanut butter cookies’ in the headline, but I omitted them, for fear of sounding like an advertisement. “Get these gooey peanut butter cookies today!!” Ick.

But honestly, they are the only words to describe these cookies. They are the best peanut butter cookies I’ve ever had, and I’m pretty discriminating with cookies. Typically, I’m purely a chocolate chip girl. I like chocolate waaaaayyy too much to branch out to other types of cookies, especially when I can’t already vouch for how they taste. Also, I hate oatmeal raisin cookies. Raisins. *shudder* They resemble chocolate chips too much, but are always disappointing!

But these PB cookies are so good, you just have to eat them straight from the oven, standing over the counter and collecting crumbs as they fall apart in your fingers.

Peanut Butter Cookies
(adapted from Rachel Schultz)

1/2 cup butter, melted
1 cup peanut butter
1/4 cup sugar
3/4 cup brown sugar
1 egg
1 tablespoon vanilla
1 teaspoon salt
1 teaspoon baking soda
1 and 1/2 cups flour

  1. Preheat oven to 350 degrees. In a stand mixer, combine butter, peanut butter, sugar, and brown sugar.
  2. Add egg and vanilla, continuing to mix.
  3. Add in baking soda, salt, and flour and mix.
  4. Shape into 1 and 1/2 inch balls and arrange on a lined baking sheet. Slightly flatten each ball of dough with a fork in a crisscross pattern. Bake 10 minutes.
